Kim's restaurant across the street from Novotel was a nice, more spicy (and definitively cheaper) alternative when we got tired of the hotel restaurant (but the breakfast at Novotel was excellent).

To get to the hotel and explore the region, we hired a car for the 5 days, starting from Don Muang airport in Bangkok. We had an easy 2 hour drive to the resort, but would not recommend this to the unadventurous or uninitiated.
The area around the hotel is still very undeveloped. Rayong, the nearest town, is still a good 20 mins drive away. It is a typical Thai provincial town with motorcycles, markets and grey, dusty shops- a stark contrast from the wealth of the resort. There is a very localised small shopping mall, so don't hold your breath for the shopping! McDonalds beat us there, selling the local glutinous rice steamed as a bun.
During our stay we drove 2 hours east and ended up near Trat, in the east. There really isn't very much worth seeing on the mainland. It was while we were on that lonely drive on the expressway that it dawned on me that a) we had forgotten to take out travel insurance for ourselves and our two young children and b)I hadn't packed a 5* hotel with me. My husband felt like he was the only white for miles.
We had considered the possibility of taking the ferry to Koh Chang (Elephant Island), but the ferry times had changed and if we had taken the later ferry we would have had very wingy, tired kids, so we gave that a miss.
Apparently Koh Chang is slated for some major development with the Thaksin government planning to turn it into a playground for the rich. (We ran into some well heeled German tourists headed that way.) There are a couple of comfortable resorts there already, although there have been reports of very ecological unfriendly practices. Hopefully it will not go the way of Phuket, but that remains to be seen.
A helpful website I accessed before deciding on Rayong as a travel destination is www.weather.co.uk, which gives the monthly temperatures and rainfalls for various destinations around the world. In spite of this, we ended up visiting there during the rainy season (Sept), but it hardly rained during the day at all.
